I've been thinking....

I have been thinking… It’s always scary when I’ve been thinking, but thinking I’ve been doing anyway. I decided that there’s not any reason for me to post only quilt related items on my blog. It’s my blog, and while I quilt a bunch, it’s not the only thing I do. Besides, if I write about something other than quilting, it’ll start to look like I actually do something. So I’ll start today with a couple of things….
First of all, the ALS Foundation’s Dallas area walk is October 30th. As many of you know, while I didn’t walk last year, I did help raise money honoring a dear friend of mine, Paul. I am doing so again this year. Unfortunately with all of the other things going on in our world these days (and yes, there’ll be more posts about those things later), I’m behind on getting started. Secondly, the weather is finally starting to think about giving us a break from the heat, and I’ve been a busy little beaver. Stocking up the kitchen with canned goods (can never have enough diced tomatoes can you??), and thinking fall/winter type desserts. One of my all time favorites is some sort of fruit crumble. However, we are not big dessert eaters, and no matter how infrequently I make a dessert, we generally throw more than half of it away. So here’s my idea for today. I made crumble stuff. In fact, I made a quadruple batch of crumble stuff, but only the dry goods. I put it in a air tight container in my pantry. Now, anytime I want that kind of a dessert, I can do just a small amount of filling, add just the right amount of crumble topping, slice some butter on it and pop it in the oven. Easy and quick. My kind of baking!!
Here’s the recipe I used in it’s quadruple quantities:
- 2 cups flour
- 2 cups brown sugar
- 2 cups Quaker Oats (quick cook kind)
- 1 cup pecan pieces
- 4 tsp cinnamon
- 2 tsp nutmeg
